During the lockdown, we serve the dishes from Restaurant Merlet with delivery service to your hotel room. Each room has been converted into a private dining space so that you can fully enjoy an exclusive in-room dining experience.

salad of North Sea crab with foie gras, hibiscus, umeboshi
and ceviche of water melon and crab

seasonal vegetables with rouille, verjus, herb mousseline and oloroso

chamomile, vadouvan and nashi pear

TEXEL LAMB, pré salé
matured in beeswax with herb hay, aubergine, artichoke,
amlou, lemon cream and lamb jus
