The kitchen brigade of Grand Café Bourgogne is led by Mattijs Kaptein . With his extensive work experience, Mattijs Kaptein creates an accessible and tasteful kitchen. His resume has many (top) restaurants at home and abroad. Mattijs has been part of the Merlet team for many years and has held various positions. Since January 2017 we can proudly call him the chef of Grand Café Bourgogne.
The service is led by Marije Visser. Marije started as a student at Merlet in the restaurant and has since completed her training as a Gastronome sommelier.
